Paleo Butternut Squash Soup

Perfect for any occasion, this Paleo Butternut Squash Soup is a filling and healthy dish. Its rich, flavorful, and bursting with butternut squash and spicy spices goodness. It is also paleo, gluten-free, and dairy-free, so it can fit into a variety of dietary plans.

Ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Coconut cream optional, for garnish
  • Fresh parsley or chives optional, for garnish

Instructions:

In a large pot, heat olive oil over medium heat

Add chopped onion and minced garlic

Saut until onions are translucent

Add cubed butternut squash, dried thyme, salt, and pepper

Stir to combine

Pour in chicken or vegetable broth

Bring to a boil, then reduce heat to low

Simmer for 20-25 minutes, or until squash is tender

Remove from heat and let cool slightly

Using an immersion blender or regular blender, blend soup until smooth and creamy

Return soup to the pot and reheat if necessary

Taste and adjust seasoning if needed

Serve hot, garnished with a drizzle of coconut cream and chopped parsley or chives if desired
