Ingredients:
- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Coconut cream optional, for garnish
- Fresh parsley or chives optional, for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic
Saut until onions are translucent
Add cubed butternut squash, dried thyme, salt, and pepper
Stir to combine
Pour in chicken or vegetable broth
Bring to a boil, then reduce heat to low
