These vegan quinoa meatball subs are a delicious and hearty alternative to traditional meatball subs. Packed with protein from quinoa and lentils, theyre perfect for a satisfying meal that even meat lovers will enjoy.
Ingredients:
- 1 cup cooked quinoa
- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4-6 whole grain sub rolls
- Marinara sauce, for serving
- Fresh basil leaves, for garnish
- Vegan cheese, optional, for topping
Instructions:
Preheat oven to 375F 190C
In a large bowl, mix together cooked quinoa, cooked lentils, breadcrumbs, onion, garlic, tomato paste, soy sauce, oregano, smoked paprika, salt, and pepper until well combined
Form the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper
Bake meatballs in the preheated oven for 20-25 minutes, or until they are firm and slightly browned
Slice the sub rolls in half lengthwise and toast them in the oven for a few minutes if desired
Warm the marinara sauce in a saucepan over medium heat
Place a few meatballs in each sub roll, top with marinara sauce, fresh basil leaves, and vegan cheese if using
