Vegan Spice Cake Donuts with Pecan Streusel and Brown Butter Icing

These vegan spice cake donuts are bursting with warm flavors and topped with a crunchy pecan streusel and rich brown butter icing. Perfect for a cozy breakfast or dessert

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1/4 cup vegan butter
  • 1 cup powdered sugar
  • 1-2 tbsp unsweetened almond milk

Instructions:

Preheat the oven to 350F 175C

Grease a donut pan

In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt

Add almond milk, applesauce, vegetable oil, and vanilla extract to the dry ingredients

Mix until well combined

Fill each donut cavity about 2/3 full with the batter

In a small bowl, mix together chopped pecans and vegan butter until crumbly

Sprinkle the streusel mixture over each donut batter

Bake for 12-15 minutes or until a toothpick inserted into the donuts comes out clean

Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

In a microwave-safe bowl, melt vegan butter

Whisk in powdered sugar and almond milk until smooth to make the brown butter icing

Dip each cooled donut into the brown butter icing, letting the excess drip off

Place back on the wire rack to set

Serve and enjoy
