Ricotta Pancakes

These fluffy and creamy ricotta pancakes are a delightful twist on traditional pancakes. The ricotta cheese adds richness and a unique texture to this breakfast favorite.

Ingredients:

  • 1 cup ricotta cheese
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions:

In a mixing bowl, combine the ricotta cheese, eggs, sugar, milk, and vanilla extract

Mix until well combined

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients and mix until you have a smooth batter

Heat a skillet or griddle over medium heat and add a small amount of butter or oil to grease the surface

Pour a ladleful of batter onto the hot skillet to form a pancake

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Repeat with the remaining batter, adding more butter or oil to the skillet as needed

Serve the ricotta pancakes hot with your favorite toppings, such as maple syrup, fresh berries, or a dollop of whipped cream
