Cinnamon Streusel Pancakes

These Cinnamon Streusel Pancakes taste great and are a copycat recipe from The Griddles famous pancakes. Great for breakfast, these pancakes are light and fluffy, and the cinnamon streusel topping is sweet and crunchy.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1/4 cup sour cream
  • 1 large egg
  • 2 tablespoons melted unsalted butter
  • 1 teaspoon vanilla extract
  • For the Cinnamon Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions:

Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl with a whisk

Put the sour cream, egg, melted butter, and vanilla extract in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Dont mix it too much; a few lumps are fine

To make the streusel topping, mix the flour, brown sugar, and ground cinnamon together in a different bowl

Add the cold butter and mix it in with a pastry cutter or your fingers until the mixture is crumbly

Melt butter or cooking spray on a griddle or nonstick skillet over medium heat to make it hot

Put 1/4 cup of pancake batter on the griddle at a time, and then cover each pancake with a lot of the streusel topping

The pancakes are done when the tops start to bubble and the edges look set

Flip them over and cook until the other side is golden brown

If you want, you can serve the pancakes warm with extra streusel topping and maple syrup
