Ingredients:
- 1 pork loin approximately 3 lbs
- 8-10 slices of bacon
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh sage, chopped
- Salt and black pepper to taste
Instructions:
Before you start cooking, heat the oven to 375F 190C
Olive oil, minced garlic, chopped rosemary, thyme, sage, salt, and black pepper should all be mixed together in a small bowl
This makes a tasty marinade with herbs and balsamic vinegar
Spread the marinade all over the pork loin and make sure its well covered
For the best flavor, let it sit for at least 30 minutes or put it in the fridge for a few hours
On a baking sheet, put a wire rack
Place the bacon slices next to each other on the rack to make a lattice of bacon that is big enough to go around the pork loin
The marinated pork loin should be wrapped in the bacon lattice and held in place
Roast in an oven that has already been heated for 50 to 60 minutes, or until the internal temperature reaches 145F 63C
The Bacon Wrapped Herb Crusted Balsamic Pork Loin should rest for 10 minutes after its done cooking before it is sliced
Cut this pork loin into slices and serve it with your favorite sides
Enjoy how great balsamic, herbs, and crispy bacon taste together
