For a summer barbecue, these Grilled Chicken Kabobs are great. The chicken that has been marinated and the colorful vegetables make a tasty and healthy meal. Light up the grill and enjoy the summer tastes
Ingredients:

- 5 lbs boneless chicken breast, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8-10 cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions:
To make a marinade, put olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl
Pour the marinade over the chicken cubes in a plastic bag that can be closed again
Put the bag in the fridge for at least 30 minutes, or overnight for the best results
Warm up the grill over medium-high heat
Using soaked wooden skewers, alternate between adding chicken that has been marinated, bell peppers, onion, and cherry tomatoes
Turn the kabobs over every so often for 12 to 15 minutes, or until the chicken is cooked all the way through and has nice grill marks
If you want, you can serve it hot and top it with fresh herbs
