Slow Cooker Chicken Tikka Masala

A fragrant and flavorful chicken tikka masala that is cooked slowly in a crock pot, making the chicken tender and the sauce rich and creamy with Indian spices.

Ingredients:

  • 5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can 14 oz diced tomatoes
  • 1/2 cup tomato sauce
  • 1/2 cup plain yogurt
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh cilantro optional, for garnish

Instructions:

In a slow cooker, combine chicken, onion, garlic, ginger, diced tomatoes, tomato sauce, yogurt, coriander, cumin, paprika, turmeric, garam masala, cayenne pepper, salt, and pepper

Mix well to combine

Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are melded

Stir in heavy cream during the last 30 minutes of cooking

Serve hot over rice or with naan bread, garnished with chopped cilantro if desired
