A traditional comfort food given a fiery makeover in this Paleo chicken soup. Warming spices like ginger, turmeric, and cayenne pepper are packed into this dish, which will make you feel cozy from the inside out. Its also grain- and dairy-free, which makes it ideal for anyone on a Paleo diet.
Ingredients:
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 cup coconut milk
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp turmeric powder
- 1/2 tsp ginger powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp coconut oil
Instructions:
Coconut oil should be heated over medium heat in a big pot
Cook the chopped chicken breast for approximately five minutes, or until browned
Add the minced garlic, chopped onion, carrots, and celery
Simmer the veggies for 5 minutes or until they are tender
Add the cayenne pepper, paprika, ginger powder, and turmeric powder and stir
Simmer for an additional two minutes
Add the coconut milk and chicken broth
Heat through to a simmer
After lowering the heat to low, simmer the soup for 15 to 20 minutes, or until the flavors are thoroughly blended
To taste, add salt and pepper for seasoning
Enjoy while hot
