Vegan Raspberry Brownie Ice Cream Sandwiches GF

Enjoy a delicious vegan and gluten-free treat that has the perfect mix of rich chocolate brownies, smooth vanilla ice cream, and bright raspberries.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips
  • 2 cups vegan vanilla ice cream
  • 1 cup fresh raspberries

Instructions:

Warm the oven up to 175F 350C

Mix the cocoa powder, maple syrup, melted coconut oil, and salt in a bowl until everything is well mixed

Add vegan chocolate chips and mix well

Make sure the mixture is spread out evenly in a baking pan that has been lined with parchment paper

Do this for 15 to 18 minutes, or until its set

Allow it to totally cool down

Cut the brownie into squares or rectangles, depending on the size of the sandwiches you want to make, after it has cooled

Let the vegan vanilla ice cream get a little softer while its out in the open

Put a lot of ice cream on top of one brownie square, and then top it with a few fresh raspberries

To make a sandwich, gently press another brownie square on top

Do it again with the rest of the ice cream and brownie squares

Before you serve, put the sandwiches in the freezer for at least an hour
