Ingredients:
- 1 cup barley
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons curry powder
- 4 cups vegetable broth
- 1 can 14 ounces coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish optional
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onions and minced garlic, saut until onions are translucent
Add sliced mushrooms and cook until they release their juices
Stir in curry powder and cook for another minute
Add barley, vegetable broth, and coconut milk
Bring to a boil
Reduce heat and simmer for 30-35 minutes or until barley is tender
